Beef suet comes from the hard, white fat around the kidneys. It is the beef equivalent to leaf lard; the perfect pastry fat.
Render this down slow and low for a cooking oil with a high smoke point that we use daily. Non-inflammatory like seed oils, this fat is shelf stable and a healthy option for cooking. Never bleached, a traditional energy source, and Low Carb, Paleo, AIP, and Carnivore Diet.
Additional options are rendering down the suet for skin care. Its very similar to sebum, which soaks deeply into the skin and contains CLA which is an essential fatty acid that keeps moisture in skin.
